In double dash, on the night-city stage (no idea what it's called) there is a pink road you can take to your right. A very useful shortcut.

In Mario Kart DS, on Desert Hills (I think that's what it was called. It was the 1st or 2nd track on the Flower Cup). Towards the end, you can get a mushroom and use it to go over the hills. It's useful to stay in first if you already are, or catch up to the ones in front of you. It's a lot better than making a ton of turns.
There's also a pyrimid on the same track. If you have a mushroom, go to the left of it instead of the right.

In MKDS, on Bowser's Castle for the Special Cup, you will come across this one turn table thing. Instead of going through the corridor like all of the other racers, you should through the corridor that has a red floor and the face-thing-that-tries-to-smash-you is staying on the floor.

In Double-Dash, on Mushroom Bridge, at the beginning of the Finish/Start Line, stay to the right. You will eventually come to a road that let's you go right. Go on that road and into the green pipe thing. You will then come out of it and be shot ahead of the other racers.
